A couple days ago, I caught the post On the MENU tonight… BACON wrapped CHICKEN… YUM by Jaynie on Steemit. While it was an intensely complicated wicked simple recipe, I decided to give it a go for dinner tonight.
I also decided to be a bit cheeky, and did my own take on it. While Jaynie used chicken thighs (I think, from what I could tell from her picture), I used boneless chicken breasts, cut into roughly thigh sized pieces. Hope you don’t mind, Jaynie – LOL!

My Bacon Wrapped Chicken By Jaynie Knockoff recipe
Ingredients
~ 2 large boneless chicken breast, cut into approximately 2 inch strips (makes 9 or 10 pieces)
~ 1 lb bacon (I used maple sugar cured bacon from our local Market Basket)
Place a sheet of parchment paper on the bottom of a 9×13 glass baking dish (for easier cleanup). Put a single layer (5 or 6 strips) of bacon along the bottom. Wrap chicken pieces with the rest of the bacon and place on top. If you still have extra bacon (speaking from experience), chop it up into small pieces and place on top to create ~~a use for when you misjudge how much bacon you actually needed~~ little bacon decorations.
Bake in the oven, preheated to 350F (180C) for 45 minute to an hour, or until a meat thermometer gives you the thumbs up.
Serve with the sides of your choice. For this maiden voyage, I made au gratin potatoes, and spinach.
